Ever wonder which spices go best with wine? Part I

If you are foodies like us, you must have wondered which spices enhance the wine to give youry guests the best experience possible.

As you may have noticed sometimes a spicy meal can be amazing, but when you pour your favorite wine – oops, it does not go well together! Then you go to a restaurant with a food pairing menu and the wine and dish enhance each other in ways you never thought possible!

So, below we will include some spices and herbs that go great with our wines, so you can keep in mind next time you have friends or family over and want to wow them with your wine & food pairing.

Protos Verdejo & dill

Although our Verdejo’s most prominent aromas are those of tropical fruits and/or citrus, there is an underlaying aroma of green herb. Dill, with its deliciously fresh, citrus-like taste, and grassy undertone enhances Verdejo’s natural aromas.

One great recipe for this pairing is the Salmon Lemon-Dill Sauce that we found in @epicurious.

Aire de Protos & garam masala

Rosé wines love spices, it enhances them and takes them to food pairing nirvana. Our Aire de Protos is heavenly paired with garam masala, because the sweetness of the cloves & cinnamon enhance the red fruits of the Tempranillo and grenache grapes, while the coriander & chili bring forward the citrus and fennel of the white varieties present in the wine.

Our inspirational vegetarian pairing is the cauliflower garam masala we found in @yummly.

Protos Tinto Fino with Peppercorn

One of the aromas that the American oak develops in wine is that of peppercorn, our Tinto Fino spends many months ageing in 50% american oak barrels with part of their malolactic fermentation done in these barrels, that is why we think this amazing recipe that includes cream and peppercorn will go heavenly with these wines.

We wanted to do a chicken recipe since peppercorn is normally associated with red meat, and we found this amazing recipe is from @thegreedygourmet, the chicken breast in creamy green peppercorn sauce.

Protos Organic Verdejo & tarragon

The sweet taste of tarragon, with its anise & mild vanilla flavors, reminds us of outdoor fun, strolling along the countryside or having picnics by the lake at dusk. That is why we think it goes perfect with our Verdejo Ecológico, our first organic white from our DO Rueda appellation.

The herbal notes of the Verdejo are increased by the tarragon and the citrus notes pair great with this spice.

For a great pairing you can make this amazing recipe @vegetariantimes of leeks and tarragon soup that will go perfect! We’d serve it chilled, like a Vichyssoise.

Protos Organic Tempranillo & Chili powder

Chili powder is normally made from dried chiles, cumin, peppercorn, oregano, and salt. However you can also buy  the chili powder at the supermarket, that is what we normally do.

The smoky and sweet taste of the chile awakens the oak notes from the barrel ageing and the cumin will bring forward the redfruits from the Tempranillo grape.

If you want to test out this spice pairing, we recommend @thewholesomedish chili con carne.
