Vineyards

From D.O. Cigales. Vinayards between 10 and 40 years old, from surrounding vineyards. Controlled.

Features

Mostly mechanical night harvest. Fast reception of grapes in inert atmosphere to avoid premature oxidation. 4 hour cold maceration. Static raking and stainless steel maceration at 14ºC. Ageing in fine lees for about 2 months with constant battonage.

8-9 ºC

COLOR

Rose currant with purple hues. Bright and lively color.

NOSE

Highly aromatic & fragrant wine. Dominated by aromas of red fruits (strawberries, raspberries & blackberries), that denote a very gourmand nose.

MOUTH

Balanced with a very fresh entry and a fruity and persistent finish with memories of red fruits.

FOOD PAIRING

Blue fish, orienal rice (Biryani, Yangzhou, Hokkien), curries, mild cheese.

From D.O. Cigales, vineyards planted between 10 and 40 years ago. From surrounding vineyards. Controlled.

Features

Mostly mechanical night harvest. Fast reception of grapes to avoid skin contact maceration. The free-run must is obtained quickly to obtain the wonderful pale color. Everything is done in inert cold atmosphere to avoid any oxidation. Fermentation in stainless steel vats at 15ºC.

8-9º

Attractive pale rosé color.

NOSE

Delicately suggestive with red & white fruits’ aromas, peach and subtle floral notes.

MOUTH

Silky and tempting wine with a fruity & gourmand finish

FOOD PAIRING

Perfect for light meals such as salad and gazpacho, also with oriental dishes (sushi, dim sum, nems), world cuisine (couscous, mezzes, hummus). Also good with fish such as tuna, anchovies & seafood.

Grape Variety

70% Tempranillo, 20% Garnacha Gris, 10% Albillo, from organic agriculture.

Vineyards

Vineyard under the Cigales Designation of Origin, organically farmed, bush-trained, 34 years old and located in the municipality of Cubillas de Santa Marta. Planted on pebbly, high-altitude soil which gives the wine finesse, depth of flavour and good aromatic intensity.

Features

Manual harvesting. Grapes are received in an inert atmosphere. Rapid, cold processing is carried out to avoid maceration, taking only the free-run must for the production of this pale rosé.

Ageing

A proportion of the wine is aged in used French oak barrels; another part is matured on fine lees for at least 6 months in stainless steel tanks. After lees ageing, the wine from barrels and the wine from stainless steel are blended. Ageing in barrels hardly alters the aromatic profile but adds texture and structure on the palate.

8-10 ºC

COLOUR

Attractive, rose petal hue.

NOSE

Medium intensity aroma, with citrus notes, red and stone fruit which, over time, will develop complexity. Toasted oak notes are very much in the background.

MOUTH

On the palate, the entry is very broad and fleshy, with a sense of volume throughout the mouth. Long, persistent finish and good ageing potential.

FOOD PAIRING

Blue fish, orienal rice (Biryani, Yangzhou, Hokkien), curries, mild cheese.
