Although the Romans used amphorae, they &#8220;copied&#8221; using barrels from the Gauls for transportation throughout the mediterranean. Barrels were also used to transport other types of products such as sugar, oil or beer. Nowadays, barrels are still the most used vessels for ageing wines. The type of oak, its age, size, etc influence the wine in different ways.<\/p>\n<p>&#8220;The wood bestows tannins, aromas and tastes that are key for the elaboration of wine&#8221; explains <strong>Marilena Bonilla<\/strong>, <strong>Chief Winemaker at Bodegas Protos<\/strong>.<\/p>\n<h2>Oak: French or American?<\/h2>\n<h3>French oak<\/h3>\n<p>Normally `barriques\u00b4 are made either from french oak\u00a0 (slow oxygenation, smooth taste, delicate aromas) or american (faster transfer of oak properties into the wine, stronger aromas). In Portugal we find \u00a0<a href=\"http:\/\/www.jmgoncalves.com\/index.php\/en\">Tonnellerie J. M. Gon\u00e7alves<\/a> whose facilities are near the <a href=\"http:\/\/es.visitportoandnorth.travel\/Porto-and-the-North\/Visit\/Artigos\/Douro-International-Natural-Park\">Douro International Natural Park<\/a> &amp; <a href=\"https:\/\/www.losarribesdelduero.com\/\">Arribes de Duero Natural Park<\/a>.<\/p>\n<p><em>&#8220;We carefully select the best batches of French oak (Quercus petraea or sessiliflora) in the beautiful forests of Allier and Vosges. This wood is characterized by a type of fine vein, which mean, that the growth rings are visible inside the trunk of a tree. It is delicate in nature, and with a very fine bois\u00e9, which fully respects the fruit of the wine throughout its ageing&#8221;<\/em>, explain from J.M. Gon\u00e7alves.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.bodegasprotos.com\/wp-content\/uploads\/2021\/05\/serragem-3-300x169.jpg\" alt=\"{%ALT_TEXT%}\" \/><\/p>\n<h3 class=\"LC20lb DKV0Md\">American oak<\/h3>\n<p>&#8220;American oak (Quercus alba), from the forests of Missouri and Appalachia, is selected from the best batches of American white oak, revealing a rich and complex aromatic character,&#8221; they add. But in addition to the type of wood, which can be combined as in the <em>Unique Barrel<\/em> model of J.M. Gon\u00e7alves that mixes 60% American with 40% French wood in the same `barrique\u00b4.
