Plots with an average age between 30 and 35 years.

Features

Harvested in small boxes and manually selected. Alcoholic fermentation at low temperature (24–25ºC) using native yeasts from our best vineyards. Partial malolactic fermentation in new French and American oak barrels.

Aging

A total of three years of maturation — 12 months in French and American oak barrels followed by two years of bottle ageing — allowing the wine to fully express its character and complexity.

Serving temperature

15-16 ºC

COLOR

Cherry color with purple rim indicating youth.

NOSE

High aromatic intensity, with aroma of ripe fruits well assembled with wood that brings aromas of sweet spices and pleasant toasted notes.

PALATE

It is an enveloping wine, tasty, balanced, with finesse and pleasant maturity. End of mouth with memories of ripe fruit.

Mostly mechanical night harvest. Fast reception of grapes in inert atmosphere to avoid premature oxidation. 4 hour cold maceration. Static raking and stainless steel maceration at 14ºC. Ageing in fine lees for about 2 months with constant battonage.

Rose currant with purple hues. Bright and lively color.

NOSE

Highly aromatic & fragrant wine. Dominated by aromas of red fruits (strawberries, raspberries & blackberries), that denote a very gourmand nose.

Mostly mechanical night harvest. Fast reception of grapes to avoid skin contact maceration. The free-run must is obtained quickly to obtain the wonderful pale color. Everything is done in inert cold atmosphere to avoid any oxidation. Fermentation in stainless steel vats at 15ºC.

70% Tempranillo, 20% Garnacha Gris, 10% Albillo, from organic agriculture.

Vineyards

Vineyard under the Cigales Designation of Origin, organically farmed, bush-trained, 34 years old and located in the municipality of Cubillas de Santa Marta. Planted on pebbly, high-altitude soil which gives the wine finesse, depth of flavour and good aromatic intensity.

Features

Manual harvesting. Grapes are received in an inert atmosphere. Rapid, cold processing is carried out to avoid maceration, taking only the free-run must for the production of this pale rosé.

Ageing

A proportion of the wine is aged in used French oak barrels; another part is matured on fine lees for at least 6 months in stainless steel tanks. After lees ageing, the wine from barrels and the wine from stainless steel are blended. Ageing in barrels hardly alters the aromatic profile but adds texture and structure on the palate.

8-10 ºC

Attractive, rose petal hue.

NOSE

Medium intensity aroma, with citrus notes, red and stone fruit which, over time, will develop complexity. Toasted oak notes are very much in the background.

MOUTH

On the palate, the entry is very broad and fleshy, with a sense of volume throughout the mouth. Long, persistent finish and good ageing potential.

Dry with an amazing balance of freshness and acidity. Good structure and body given by its fine lees’ aging. Long finish with a slightly bitter palate, typical of the variety.

This wine is made from 100% Sauvignon Blanc grapes sourced from a blend of a 30-year-old vineyard with gravel and clay soil in the La Virgenplot and a 10-year-old vineyard with sandy soil in the Los Rosalesplot.

Features

Night harvest. Skin maceration for 4 hours at 10ºC. Pressing in an inert atmosphere and static settling at 10ºC. Temperature-controlled fermentation at 14.5ºC using selected yeasts from our own vineyards.

Crianza

Aged on fine lees in stainless steel tanks for approximately 2 months (determined by tasting, tank by tank).

Serving temperature

6-10 ºC

COLOR

Pale straw-yellow color with steely hues, indicating youth. Very clean and bright.

NOSE

Medium-intensity nose with prominent herbal and citrus notes.On the palate, it is a dry wine with a very pleasant entry and a freshness that invites further drinking.

Features

Mechanical night harvest. Skin contact maceration of 4 hours at 10ºC. Static racking at 10ºC. Controlled fermentation at 13.5ºC, with indigenous yeasts. Aging on fine lees for approximately 2 months. All products used during elaboration are in line with organic winemaking.

COLOR

Bright yellow straw color, with green hints that reflect its youth.

NOSE

Medium high intensity, a bit fresher but slightly less complex than traditional Verdejo. Citrus notes, along with green apple and herbs appear.

MOUTH

Dry with good acidity, but with good roundness and structure brought by the 2 months’ fine lees aging. Long finish with a slightly bitter palate, where the apple and herbal notes appear.
