BODEGAS PROTOS DEVELOPS ITS “PURSUIT OF KNOWLEDGE” SUCCESSFULLY

Recent works has allowed the production of quality wines marked by a specific criminality to face global competition

The technical department of Protos has approached the study of the characterization of the vineyards over the past three years, in order to obtain wines of unique quality to allow the company more competitive on the international wine market. In total, we have worked to achieve excellent knowledge of 1,140 plots representing 1385 hectares in area, aged between 5 and 100 years.

This awareness program implemented by PROTOS has provided a reliable and definitive data to assess each item of grapes:

1. Tab for assessing the quality of the grapes in the vineyard.

It values the grapes through regular visits to vineyards, based on an information sheet that evaluates external leaf surface, production, state of the leaves, water availability, stop growth, vigor, health status of the clusters, the clusters exhibit , size and compactness of clusters, color and size of the berry.

2. Analytical monitoring of the ripening grapes.

Sampling of grapes with which to obtain a curve of each of the analyzed parameters (weight of 100 berries, sugar, pH, acidity, malic acid, potassium, color, phenols, ammonia nitrogen and equivalent), determining the phenolic maturity .Grapes from each field and setting the optimal date of harvest of each plot planning the entry of grapes in the cellars.

3. Infrared analysis equipment.

At the entrance to each batch of grapes in scale, it takes a representative sample for analysis with infrared equipment. The parameters studied are likely extent, pH, acidity, malic acid, potassium, color, IPT, gluconic acid and nitrogen.
